Quick German Spelt Bread
Woooohoooo! Yes, this tastes like a real bread. I baked it for the first 4 years here in Australia when I was missing good old German bread. It is super quick and there is seriously no excuse to not giving it a try. The only thing you will regret is that you didn’t do it earlier.

What's inside

500g spelt flour
-
150g mixed seeds (poppy, sesame, pepitas, sunflower)

4g dry yeast

2 cups water (500ml)
How to

Line a loaf tin with baking paper.

Preheat the oven to 250°C.

Add all the ingredients in the order above to a mixing bowl. Mix well immediately.

Pour the dough into a loaf tin and put it directly into the oven on the middle tray for 30 – 45 minutes.

After 10 minutes, cut the top of the bread with a sharp knife to avoid uncontrolled cracking.

Once the bread is ready you will smell it. Test it by sticking a tooth stick into the bread. If it comes out clean, it’s ready; if there is still some dough on it, leave it in for another 2-3 minutes before you test again. You can also switch off the oven at this point, the remaining heat will be enough.
